Danico Unveils New Xplorer Menu Inspired by Peru’s Heritage

Danico has released the fifth edition of its Xplorer series, focusing on Peru. The menu showcases 12 original cocktails that draw inspiration from the country’s diverse culture and landscape, incorporating local ingredients. Nico de Soto collaborated with Coco Gaudin to create these unique beverages, further highlighting Danico’s commitment to global culinary exploration.
Danico, a bar located in Paris, has unveiled the fifth edition of its Xplorer series, which draws inspiration from Peru’s rich culture and heritage. This series, first launched in 2023, introduces a new menu every six months reflecting various global regions, such as the earlier focus on Japan stemming from the travels of Danico owner Nico de Soto.
Nico de Soto’s initial visit to Peru in 2007 significantly influenced his work, as he was captivated by the country’s diverse landscapes and vibrant culture. The menu narratively embodies Peru’s combination of indigenous traditions, colonial influences, and contemporary flavors, showcasing local ingredients in innovative cocktails.
Collaborating with bar manager Coco Gaudin, de Soto crafted 12 unique cocktails inspired by these themes. The Titicaca cocktail features Rémy Martin VSOP Cognac alongside pumpkin seeds, spices, fig leaf, pumpkin, lemon, and grilled sweet potato milk. Another creation, Chicha Morada, modifies the traditional Peruvian drink by incorporating Grey Goose Vodka and rectified apple juice.
Additionally, the Leche de Tigre cocktail combines Citadelle Gin with ceviche distillate, coconut oil, lime, aji amajillo, and coriander. The Tupánanchiskama cocktail, meaning “see you soon” in the ancient Quechua language, merges tonka-infused Bacardí 8 rum, roasted coffee distillate, arroz con leche, chancaca syrup, and eggs. Notably, earlier this month, de Soto also introduced his pandan liqueur, Kota, to the US market.
