The festival runs every Saturday until June 28.

The Taste of Morocco food festival at Novotel Airport is definitely one that tantalizes the senses. Hosted by Head Chef Amanna Raju, the event offers an ideal opportunity to delve into the warmth and richness of Moroccan cuisine, characterized by bold spices and earthy ingredients. Attendees experience a culinary journey that feels both exotic and heartwarming, making it a perfect option for food lovers looking to explore new flavors this season.

The festival kicked off with a trio of refreshing salads that were simply delightful. We had a crunchy vegetable medley, a zesty fish-based salad, and an intriguing khus khus (poppy seeds) dish that added a surprising aftertaste. Following that, we savored the Shorba ma Sherwja, a traditional Moroccan soup with grilled chicken. It was perfectly warm and hearty — just what one needs on a rainy evening, truly satisfying and comforting.

Next, the table was filled with a tantalizing platter featuring fresh Hummus, creamy Labneh, and smoky Muhammara, along with both baked and fried pita bread. The experience was engaging; tearing pita and mixing it up with the spreads made everything even more delightful. Chef Raju joined in our conversation, and before we knew it, the platter was completely cleared!

As we moved on, the standout dish was chicken seasoned with aromatic Moroccan spices that offered an incredible flavor. Following that, we tried juicy chicken and paneer shawarmas along with crispy falafels. Each item was rich in taste, and surprisingly hefty portions kept our appetites satisfied. Just a small serving left us feeling both full and blissful.

On the dessert front, we indulged in Baklava, a moist and fragrant Basbousa, and Mahalabia, a delicate milk pudding that gave a sweet but not overwhelming close to the meal. Each dessert struck that perfect balance of sweetness to leave us with a warm smile.

Chef Amanna emphasized the essence of the festival, stating, “Moroccan cuisine is a mosaic of Mediterranean freshness, Berber soul, and Arabic depth. We wanted to bring these bold and comforting flavors to Hyderabad and help people connect with the spirit of the cuisine.” He notes the presence of live food stations, allowing guests to tailor dishes to their liking. “It’s more than just a meal; it’s a celebration of food, family, and shared moments.”
