Bistro Manila, a new addition on Broad Street, is introducing an authentic Filipino dining experience in a region where such cuisine is rarely available. Founded by Ronald and Maria Nutt, this restaurant aims to bridge the gap left by the previous establishment, Bayou Rouge. Maria, a native of the Philippines, describes Filipino cuisine as “the original fusion cuisine,” influenced by various global regions, including Asia and Europe, particularly Spain.

Ronald Nutt emphasized that Bistro Manila is the sole Filipino restaurant within a 100-mile range, observing a growing interest in Filipino food across different locales. “It’s a taste people are looking for,” he stated, highlighting their aim to offer genuine Filipino dishes to local residents.

The initial menu at Bistro Manila will consist of a select few dishes, with plans for expansion based on customer preferences. Ronald informed that the cuisine is flavorful yet not excessively spicy, distinguishing it from other Asian styles. Featured during the soft opening were popular dishes like Pansit Bihon Guisado, Chicken Pork Adobo, and Lumpiang Shanghai, showcasing a blend of different culinary influences.

Maria expressed her family’s culinary heritage, promising that the offerings are reflective of homestyle cooking. Ronald mentioned that while the meals are not specifically health foods, they are made with health-conscious choices in mind, aiming to be a healthier alternative to fast food without compromising on speed.

Feedback from customers has been overwhelmingly positive; notable endorsements came from former Tally Ho owners Bob and Donna Kelly, who praised the quality of the food. Maria’s daughter and son-in-law, Pinch and Gilbert Golpeo, are also co-owners of the bistro, having relocated from California to join this venture.

Ronald reported that the soft opening attracted a successful turnout, and Bistro Manila’s operational hours will be Monday through Friday from 11 a.m. to 1 p.m. for takeout, with dine-in services on Friday evenings from 4 p.m. to 7 p.m. “We’re going to be different, but we’re going to focus on a taste people will like,” Ronald declared.
